Pilot - Skor Toffee Bits Cookies

Here we go! First post of a shiny new blog. It's taken me a while to come up with how to start, and even though I've written it and rewritten it a few times I am still a little unsure.

I've gone through recipes trying to pick one for the first post. I have quite a few recipes apparently. It took a while to decide on only one. 

So here it is! 




Chipits Skor Toffee Bits Cookies!

Sounds good right? 

So, hang in here with me, I've only made these once before. They did turn out a bit flat that first time but man, oh man, they were delicious! 



Ingredients:
- 2 1/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter or margarine (softened)
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 1/3 cups Chipits Skor toffee bits


Of course the recipe says to grease a cookie sheet (which you can definitely do) but I have a love of parchment paper. I cut a piece just big enough to cover my cookie sheet. No messy cookie sheets, no scrubbing when I'm done means I am a happy camper. 

Now, after that, let's turn the oven on to 350 degrees. 

Let's start mixing stuff!

(Here's a quick disclaimer: I don't follow the recipe exactly when it comes to the order of mixing things up.)

So the recipe says to mix the dry ingredients together in a separate bowl first. This is the part I really don't pay much attention to. In the end it doesn't make a difference that I've noticed. 

And now we bring out the big mixer (I use my Kitchen Aid mixer religiously) to get the rest going. We'll beat the butter/margarine, brown sugar, granulated sugar and vanilla together until it's all smooth. Then the eggs go in. Beat everything together until well blended (it should turn out pretty smooth).

So I had my sister coming in and out of the kitchen to take pictures for me. And then the little ones had to come see what their mums were up to, so they were coming in and out as well. Normally I would hold my little girl up so she can watch the mixer but she was content to pull magnets off the fridge and play with her cousin this time. It got pretty busy.

Slowly add the flour mixture (unless you chose to do it like me, then you just add everything in separately). Once again beat it until it's all well blended. And once again it should be pretty smooth. 

And then we add the toffee bits! Yummy! (Note to self: do not munch on these... They need to go into the batter!) But of course now I'll have to do a taste test with the toffee bits in the batter...



So the toffee bits taste good with the batter too... 

Now, we drop the batter by the teaspoon onto our cookie sheets (one day I will have a proper cookie scoop for this stuff). I do only 6 per sheet so if they spread they won't get stuck together and it's also easier for me to keep track of how many cookies I've made.



Then into the oven they go! For 9 to 11 minutes (I like to do a nice even 10), or until they're lightly browned. Let them cool for a few minutes before taking them off the sheet. Set them on a rack to cool completely.



..... And then you eat them!!

I had hoped to get a picture of the cookies when people were reaching for them but I just wasn't quite quick enough. Oh well!
